Pork Pepper Pasta (PP Pasta)
Ingredients
Directions
Pork Pepper Pasta (PP Pasta)
Ingredients
Container of ground pork
1 small onion
1 red bell pepper
2 cloves of garlic, minced
Small handful of cherry tomatoes (½ cup)
White wine (optional)
1 tsp salt and pepper
Some Italian spices
Gnocchi or pasta
Some cheese
Make
- Cut up onions, tomatos, pepper, and garlic
- Sauté ground pork with rosemary, thyme, and italian seasonings until crispy (don’t over season). Remove from the pan while leaving the oil.
- Saute diced onion in the oil until soft and translucent, then add minced garlic, diced peppers, and diced tomatoes. Season a bit more with rosemary, thyme, pepper, salt, and italian seasonings, then saute until the tomatoes have turned to mush.
- Scrape the goodies off the bottom of the pan, then add meat, maybe a cup or so of water until it’s watery, and a sploosh of white wine.
- Simmer while covered on med low until everything is gooey and the peppers are nice and soft.
- Make sure the sauce is liquidy, then add a proportionate amount of gnocchi or pasta (half bag?) to the sauce.
- Cover again and simmer until the gnocchi is tender (5 or 6 minutes).
- Serve topped with a bit of cheese.
