Ingredients

1 lb ground beef 1/2 cup breadcrumbs 1 medium onion 1 egg 2 cloves of garlic, minced 1/2 tablespoon cumin 1/2 tablespoon coriander 1 tsp Salt and pepper YOGURT SAUCE: big glob of greek yogurt (1/2 tsp) squeeze of lemon Glorp of olive oil Salt

Directions

  1. Breadcrumbs hold them together. If you are making them yourself, toast bread until as dry as possible, let them cool fully, then crush in a bowl until mostly fine (or just use a food processor if you have one)
  2. Grate onion and squeeze juice out of it, then chop garlic
  3. Put all ingredients into big bowl, and mix with hands until combined
  4. Roll out into meatballs as big or as small as you want, then give them a little smoosh to flatten a bit
  5. Cover them and put them in fridge to rest of minimum one hour (the longer the better)
    1. Pro tip: cook as many as you want for one meal, then leave the rest uncooked in the fridge so they can rest overnight
  6. Put olive oil in a pan and cook until the middle is no longer pink. They will be soft and juicy, but as long as they aren’t pink, you can eat them. They will stick to the pan. Be sure to flip them constantly so you don’t burn them.
  7. Let them sit for a minute while you mix yogurt sauce
  8. Good with rice and roasted veggies, or in a pita with pickled cabbage, tomatoes, red onions, yogurt sauce, and coriander.
